Excess iron can be harmful to your health. Caution should be used when adding any dietary supplement. Your diet should supply you with all the necessary nutrients.&lt;br /&gt;&lt;br /&gt;Supplements can be a good way to make sure that you are getting everything you need in your diet. RA is a major risk factor for these cardiovascular diseases, but a gluten-free vegan diet was shown to lower cholesterol, low-density lipoprotein (LDL) and oxidizedLDL (OxLDL), as well as raising the levels of natural antibodies against the damaging compounds in the body that cause symptoms of the chronic inflammatory disease rheumatoid arthritis, such as phosphorylcholine.&lt;br /&gt;&lt;br /&gt;The idea that we can influence our health by changing our eating habits has become a fashionable idea among lifestyle and consumer magazines. There is evidence that dietary changes can bring about health benefits but specific results are not widespread.&lt;br /&gt;Now, Johan Frostegard of the Rheumatology Unit at the Karolinska University Hospital in Stockholm and colleagues divided sixty-six RA patients randomly into two groups. They randomly assigned 38 of the volunteers to eat a gluten-free vegan diet, and the other 28 a well-balanced but non-vegan diet for one year. They analysed the levels of fatty, lipid molecules in blood samples using routine analytical methods at regular periods. They also measured oxLDL and anti-phosphorylcholine (antiPC) factor at the beginning of the experiment, at 3 months and again at 12 months.&lt;br /&gt;&lt;br /&gt;The researchers found that the gluten-free vegan diet not only reduced LDL and oxLDL levels and raised antiPC antibodies but lowered the body-mass index (BMI) of the volunteers in that group. Levels of other fatty molecules, including triglycerides and high-density lipoprotein (HDL) stayed the same. In contrast, none of the indicators differed significantly for the control groups on the conventional healthy diet.&lt;br /&gt;&lt;br /&gt;AntiPC antibodies are studied within CVDIMMUNE, an European consortium led by Dr Frostegard with the hypothesis that such antibodies can protect against cardiovascular disease and can be used as diagnostic and therapeutic factors.&lt;br /&gt;&lt;br /&gt;Frostegard and colleagues have now shown that diet could be used to improve the long-term health of people with rheumatoid arthritis. It wasn't a difficult decision as I wasn't a voracious carnivore to begin with, however there were a few dishes that I missed that contained meat and wondered how I was going to live without these favorites.&lt;br /&gt;Rather than resign myself to the notion that these dishes could never be converted over to a meatless status, I decided to pull myself up by my vegetarian bootstrings (cotton, of course), and see if I could find a way to convert these meat-ies to meatless.&lt;br /&gt;The first was my Grammy's recipe for American Chop Suey, actually, almost everyone's Grammy made this or some variation of it. I tried different ways but this one comes the closest:&lt;br /&gt;Meatless American Chop Suey&lt;br /&gt;1 vidalia onion chopped&lt;br /&gt;1-2 tbsp. butter&lt;br /&gt;1/2 pkg Quorn (brandname) veggie grounds frozen&lt;br /&gt;2 cans Campbells Tomato Soup&lt;br /&gt;1 tblsp. catsup (yes catsup, you can't really taste it, it just adds a rich color to the sauce)&lt;br /&gt;sea salt and pepper to taste&lt;br /&gt;1 lb of your favorite fancy pasta in its rigati form, that means with lines, or something like like gemelli or rotini&lt;br /&gt;Melt butter in a medium sized skillet over low heat. Add vidalia onion and gently saute until translucent. Add frozen Quorn grounds and heat till thawed. Add 2 cans soup and cook over low heat for 5-7 minutes. Add catsup salt and pepper and cook an additional 102 minutes.&lt;br /&gt;Bring 4 quarts of water to a boil. Add pasta and cook until al dente. Drain thoroughly and add sauce to pasta. Stir to incorporate completely. Serve. Serves 4-6 people as a side.&lt;br /&gt;This next one is an adaptation of a Greek-Middle-Eastern recipe for Dolma. I loved this dish as a youngster summering on Cape Cod. A wonderful Lebanese family "turned me on" to this dish and I have finally found a way to make it meatless and spectacular!&lt;br /&gt;Veggie Dolmas&lt;br /&gt;1 jar of Grapeleaves in brine&lt;br /&gt;Filling:&lt;br /&gt;2 cup basmati rice cooked&lt;br /&gt;1/2 cup currants&lt;br /&gt;1/2 cup of pine nuts ground&lt;br /&gt;1/2 cup quorn grounds thawed&lt;br /&gt;2 tbsp. dried mint (or 1/4 cup fresh mint chopped fine)&lt;br /&gt;1 tbsp. dried parsely (or 1/4 cup fresh parsely chopped fine)&lt;br /&gt;1 tsp dried oregano (or 1/8 cup fresh oregano chopped fine)&lt;br /&gt;1 tsp. sea salt&lt;br /&gt;2 tsp pepper&lt;br /&gt;1 small can tomato paste&lt;br /&gt;Juice of 2 lemons&lt;br /&gt;Remove the grape leaves from the jar, rinse and unfold carefully and rinse again. Lay paper towels and pat dry. Gently remove any stems that are still on the leaves.&lt;br /&gt;In a large bowl mix the filling ingredients together till they are well incorporated.&lt;br /&gt;Carefully separate a few of the leaves and line the bottom of a 1-2 gallon stock pot.&lt;br /&gt;To roll take a leaf, place 1 heaping tsp of filling in the center of the leaf about 1/2 inch up from the bottom edge. Fold 1/2 inch up over the filling, fold each side toward the middle, then beginning at the bottom again roll the whole package up till you have a 1-2" "log.&lt;br /&gt;Continue with the rolling process till you use up all the filling.&lt;br /&gt;Line the rolled leaves up in a circular pattern in the stock pot till all are in. Pour the juice of both lemons gently over the rolled leaves. Place a dinner plate on top with a stone in the middle to keep in place. Gradually add cold water till it just covers the leaves.&lt;br /&gt;Bring contents to a boil then reduce and simmer for abount 1/2 hour till tender. Drain water by holding on to stone to keep plate in place and gently pour out cooking water. Leave plate on till almost cool.&lt;br /&gt;Remove plate and serve with plain yogurt, yummy.&lt;br /&gt;These can be frozen in 1-2 serving sizes for later. Some people have an aversion to its licorice-like scent, while others feel as if fennel is a bizarre and obscure vegetable that they have no interest in learning how to prepare. However, those who have discovered it know that ignoring fennel is a waste of a versatile vegetable’s amazing flavor and healthful benefits. Even those who already cook with fennel might find that they aren’t taking advantage of its versatility. For example, many people use only the delicate, lacy parts of fennel as a flavor-enhancing garnish for soups or salads. Others stick to just using the green-white bulbs, while tossing the remaining pieces aside. However, there’s no season like now to start using and enjoying all the parts of fennel.&lt;br /&gt;&lt;br /&gt;Fennel is available from autumn until early spring and both its stems and bulbs have been found to contain many nutrients. Wash and dry the chicken. Thoroughly rinse and dry the inside cavity as well. Salt and pepper the cavity and place the whole bulb of garlic inside. Take your finger and slide it under the breast skin. Place dabs of butter in 2 or 3 spots on each side of the breast, under the skin. Take about 2 ounces of softened butter and spread it over the chicken with your fingers. Salt and pepper the outside of the chicken to taste. Arrange the chicken in a covered roasting pan. Roast at 375ºF for about 1 1/2 hours, basting occasionally to keep it moist. Carve and serve.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Roasted Root Vegetables Potatoes&lt;/strong&gt;, peeled and cut into 2" wedges Sweet potatoes, peeled and cut into wedges or sliced straight across into thick slices Sweet onions, peeled and cut into wedges Carrots, peeled and cut into long thick sticks Olive oil or vegetable oil 1 tablespoon dried rosemary Salt and pepper Begin preparing the vegetables as soon as the chicken is in the oven. Oil a 13"x9" glass baking dish. Place the cut vegetables in the baking dish. Drizzle oil over the vegetables and mix to coat them all. Salt and pepper the vegetables. Sprinkle dried rosemary over them. When the chicken has been in the oven for 30 minutes, put the vegetables in. Roast the vegetables, uncovered, for about 1 hour, until all are soft. The onions will be a bit carmelized and nice and sweet. Note: Try varying the vegetables in the mix. Parsnips would be nice as well. You can also add a bit of garlic if you are a garlic lover. Kids and adults alike love this nutritious, satisfying soup.&lt;br /&gt;3 med potatoes, skinned and cubed 1/2 lb. tofu 4 cups water (you can substitute one cup of water with vegetable broth) 1 medium yellow onion, chopped 1 teaspoon salt 1 T. olive oil 1/4 c. chopped parsley black pepper to taste&lt;br /&gt;Directions: Fill a large pot with the water and vegetable broth. Bring the water to a simmer and lower the potatoes and onions into the pot. Add sea salt. Simmer for about 20 minutes or until potatoes are tender. While the potatoes and onions are cooking, blend the tofu and olive oil in a food processor. When the potatoes and onions are done, add half of the batch to the food processor with the tofu and olive oil mix and process. Return the contents of the food processor to the pot containing the water and the other half of the potato/onion mix. Add parsley and black pepper to taste. You might also want to add bacon bits or vegetarian bacon bits to the mix. Diet is one of the most important ways of controlling diabetes, and a vegetarian lifestyle with its emphasis on low fat, high fiber, and nutrient-rich foods is very complementary.&lt;br /&gt;&lt;br /&gt;Affecting more than 30 million people worldwide, this disease inhibits the body from properly processing foods. Usually, most of the food we eat is digested and converted to glucose, a sugar which is carried by the blood to all cells in the body and used for energy. The hormone insulin then helps glucose pass into cells. But diabetics are unable to control the amount of glucose in their blood because the mechanism which converts sugar to energy does not work correctly. Insulin is either absent, present in insufficient quantities or ineffective. As a result glucose builds up in the bloodstream and leads to problems such as weakness, inability to concentrate, loss of co-ordination and blurred vision. If the correct balance of food intake and insulin isn't maintained, a diabetic can also experience blood sugar levels that are too low. Several brands of margarine and salad dressings use alternative seed oils, not healthy olive or flax oil as their base. Meanwhile, in a bowl stir together egg, ricotta cheese, parmesan cheese, and 1/4 t pepper. Stir in broccoli. Spread about 1/2 cup of the sauce in a 13x9x2" baking dish. Top with half the noodles, half of the broccoli mixture, and half of the remaining sauce. Repeat layers, ending with the sauce. Bake, uncovered, in a 350 deg F oven for 25 minutes; sprinkle with Mozzarella. Bake 5 minutes more or till heated through. She uses a lot of fresh ingredients and her recipe takes a bit more of your time than expected for such a simple yet delicious dish.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;&lt;br /&gt;* 1 can of chick peas (15 1/2 Oz; 439 gr)&lt;br /&gt;* 1 medium onion, finely chopped&lt;br /&gt;* 1 teaspoon ginger, finely chopped&lt;br /&gt;* 1 clove garlic, finely chopped&lt;br /&gt;* 1 green chilly, finely chopped&lt;br /&gt;* 2 medium well ripened tomatoes, seeded and chopped&lt;br /&gt;* 1 tablespoon fresh coriander chopped&lt;br /&gt;* 1 tablespoon lemon juice&lt;br /&gt;* 10 g vegetable oil&lt;br /&gt;* Spices:&lt;br /&gt;- 1/2 teaspoon turmeric&lt;br /&gt;- 1/2 tablespoon ground coriander&lt;br /&gt;- 1 tea spoon "garam masala"&lt;br /&gt;- salt to taste&lt;br /&gt;&lt;br /&gt;PREPARATION&lt;br /&gt;&lt;br /&gt;1. Drain chick peas, reserving the liquid.&lt;br /&gt;&lt;br /&gt;2. Cook the onions, ginger garlic, chilies and turmeric in the vegetable oil until golden and softened.&lt;br /&gt;&lt;br /&gt;3. Add the tomatoes and cook to soften, then add the ground coriander and chick peas.&lt;br /&gt;&lt;br /&gt;4. Cook for 10 minutes, add the reserved liquid and cook a further 10 minutes.&lt;br /&gt;&lt;br /&gt;5. Add "garam masala", lemon juice and stir in the fresh coriander.
